A historical sake brewery with Japan's first female Kurabito (first-class brewing technician)

Since its establishment in 1790, Ichishima Sake Brewery has used soft water from the Kajikawa River, which flows through Kita Echigo, and locally produced Gohyakumangoku and Koshitanrei sake rice. Famous sake such as "Aumont'' are made by the Echigo toji (brewmasters), who strike a balance between respecting traditional brewing techniques and exploring innovative ones, an approach that has earned them many awards in Japan and abroad. 

In recent years, the company has ambitiously launched new products, such as Junmai Ginjo brewed with wisteria flower yeast and Junmai Daiginjo brewed with "Shinnosuke," a new rice brand from Niigata. 

Visitors can see the tools used for brewing sake in olden times and the collection of items that tell the history of the Ichishima family (sake brewer). 

The store also sells the "Karen" series, which is popular among women for its low-alcohol, and limited-edition sake only available at the brewery. There is also a free-tasting corner with more than seven types of sake.
